Khoai lang gọt vỏ, cắt miếng hình chữ nhật có độ dày hơn 1/2 đốt tay.

Cho đường còn lại cùng với 70 ml nước lạnh và vani vào nồi hòa tan, bắc lên bếp nấu sôi, sau đó hạ lửa nấu 3 phút nữa.
Cho khoai lang sấy/phơi hơi khô vào sên lửa thật nhỏ để đường kết tinh bám xung quanh khoai (7-10 phút). Khi thấy đường kết tinh khô ráo là tắt bếp.
Cho mứt khoai lang ra khay, phơi nơi có nắng 1-2 tiếng để khoai càng khô hơn. Khi phơi mứt khoai xong, chờ khoai nguội, mới cho khoai vào hũ, bảo quản nơi thoáng mát.
